I created this 20 minute sausage pasta recipe at university as a quick and tasty meal I could cook to impress the ladies. As I ended up marrying The Lady it obviously had the desired effect, why not try it out for yourself.
Serves 2 people
- 3 good quality sausages
- 1 tablespoon of oil
- 1 400g tin of tomatoes
- 1 bell pepper
- 3 cloves of garlic crushed
- 90g of pasta
- handful of frozen peas thawed
- 1 tablespoon of light soy sauce
- 1 teaspoon of dark soy sauce
Tip Try adding 1 teaspoon of dry chili flakes to give this 20 minute sausage pasta recipe a kick.
- Step 1
De-skin and cut each sausage into 5 pieces and slice the pepper into 1cm wide lengths.
- Step 2
Add the oil to a large frying pan. When hot add the sausage pieces and cook for 4-5 minutes. Chuck in the pepper and cook for a further 3 minutes until they begin to soften. Then add the garlic and cook for 1 minute to avoid burning. Finally, add the tin of tomatoes and the soy sauces reduce the heat and stir. Leave to simmer for 10 minutes.
Tip For a different taste sensation why not try alternative flavoured sausages. I like Caramelised Red Onion & Pork Sausages.

While the sauce is reducing, place the pasta in a pan of boiling water and cook for 10 minutes- depending on what pasta you use this timing will vary.
Tip We use Fusilli Pasta, however Rigatoni with its ridges and tube like structure are also great for this recipe as they hold a lot of sauce.
- Step 4
With 5 minutes left add the thawed peas to the sauce and continue to simmer.

Drain the pasta and add to the sauce stir together and serve with gratings of Parmesan.
