I created this quick tortilla pizza recipe as a low calorie alternative to heavy dough based pizzas, and it is also something that can be rustled up as a quick snack if and when the mood takes you.
Makes 2 pizzas
- 2 plain flour tortillas
- 1 carton of tomato pasata
- 2 garlic cloves crushed under your palm
- 2 tsp dried oregano
- mature cheddar cheese grated
- pack of Italian meat selection (from the cooked meats section of your local supermarket)
- ½ red onion diced
Tip The Infused Pasata will make enough for 4 pizzas so let it cool and either freeze or store in your fridge for up to 1 week.
- Step 1
Pre heat your oven to its highest temperature and place either baking trays or pizza stones in to heat up.
- Step 2
Combine the Passata, garlic and oregano in a pan and bring to a simmer for about 5 minutes so the flavour’s infuse.
- Step 3
Place you tortilla’s on to your worktop and spoon over the now infused tomato sauce. Spread the sauce across the entire surface with the back of your spoon so that it covers the entire tortilla.
- Step 4
Take the Italian meats and tear and place them onto your pizza. Then sprinkle over the cheese
- Step 5
Place the pizza’s onto the now hot baking tray’s or pizza stones and cook in the oven for 5 to 10 minutes, until the cheese has melted.

Take the pizza’s out of the oven and then drizzle over a little olive oil and slice each pizza into 8, serve and enjoy.
