Simple quesadilla recipe uses my Mexican pulled pork as it’s major ingredient. You could quite easily switch this out for whatever filling you desire.
- 1 portion of Mexican pulled pork
- 2 tortillas
- ½ red oinon
- ½ bell pepper
- grated cheddar cheese
- 1 teaspoon of oil
Tip Why not try this as an accompaniment along with extra pulled pork in tacos to create a Mexican feast.
- Step 1
Heat the Mexican pulled pork gently in a pan. While this is warming through finely dice the pepper and red onion.
- Step 2
Take one of the tortilla’s, and place the Mexican pulled pork so it is evenly spread across it, sprinkle on top the pepper, red onion and cheese. Then place the other tortilla on top and press down firmly.
- Step 3
Add the oil to a hot large frying pan and brush across the base. Place your quesadilla in the pan and try to slide it clockwise so that it dose not stick and burn. After about 1 minute flip the quesadilla over and repeat the process.
Tip Having trouble flipping you quesadilla? Try placing a plate on top of it in the pan and turn it over, then sliding it back into the pan.

Take your quesadilla and cut it into 8 slices and serve with my salsa recipe, sour cream and guacamole.
Tip Cut the finished quesadilla with a pizza cutter to get perfect slices.
